Sneak Vegetables Into Your Family’s Diet – Try Corn Fritters

Disguising vegetables may be the only way you can get your kids to eat them. One of our favorite ways to turn an ordinary vegetable into a tasty treat is by making Corn Fritters. Even though we struggle getting our kids to eat corn, it seems this treat is a winner every time.

If you can turn some ordinary corn into Corn Fritters quickly and easily, you’ve got a solution to the problem. Just one easy Corn Fritters recipe that you can turn to when you need a vegetable that your kids will eat, is all you need to provide your kids with a balanced diet.

Learning how to make Corn Fritters is easy once you know the basics. A deep fryer is not necessary if you have a heavy pan, like a cast iron skillet. You can use a thermometer to check the oil temperature, but that is not necessary if you are used to testing oil using the sizzle method; dropping a little water in the oil to be sure it sizzles. The type of oil you use must be high heat tolerant; such as safflower, sunflower, or peanut. Keep enough oil in the pan so the Corn Fritters are submerged about halfway up, and be sure not to crowd the pan with too many fritters at once. If you have a deep fryer, be sure to follow their owner’s manual.

Even though there are many ways for making Corn Fritters, all the recipes have corn as one of the main ingredients. Whether you use corn on the cob during the summer, or frozen corn, creamed corn, or canned whole kernel corn, it doesn’t matter. You’ll just be adjusting the recipe to take into account the amount of liquid to add to make your batter.

Of course, flour will be another component to most any Corn Fritters recipe. However, other ingredients that are used to hold together your batter may be cornmeal, Bisquick, or other pancake type mixes. You can also use a combination of all these ingredients if you wish.

Another option to add to your Corn Fritters recipe is an egg. You may not need to add an egg to hold your batter together, but many people prefer this method for the added nutrition. It won’t hurt to add an egg even to a recipe that doesn’t call for one.

Now comes the flavor of your Corn Fritters. Add in seasonings that you like. Try some garlic and onion if your kids like that. If not, how about some Parmesan cheese? You can even put in a touch of sugar if you want to really sneak that corn past your kids. Drizzle a little honey on top and they’ll think they’ve just been served dessert.

This method of disguising corn to get your kids to eat it can apply to any vegetable. Try chopping up a variety of vegetables like carrots, broccoli, and cauliflower, and using your Corn Fritters recipe to make “Vegetable Fritters” instead. Experiment with leftovers and see what fun new recipes you can come up with to temp your little ones.
